Their search led them to einkorn, the most ancient and pure form of wheat, which has remained unchanged for over 12,000 years and is naturally higher in protein, carotenoids, B vitamins, and essential minerals compared to modern wheat. Unlike modern wheat, einkorn has a weak gluten structure that makes it easier to digest and less likely to trigger gluten sensitivity symptoms, allowing families like theirs to enjoy bread and baked goods without discomfort.

Jovial Foods has since become the world’s largest grower of organic einkorn, working directly with farmers to ensure sustainable, regenerative practices and the highest quality yields.
